Even this rainy day couldn’t stop me from having brunch, apparently many other diners in Shanghai felt the same way, because Liquid Laundry was packed to the brim even in the rain at 11am.

I was in the mood for rosti and salmon, and guess what? Liquid Laundry has a dish with smoked salmon and ikura, on top of a rosti. Lucky Me!

Because I didn’t had a reservation, I had to sit lonesomely by the pizza bar counter, which was fine since I was just there for the food. If you intend to spend a nice weekend morning at Liquid Laundry, be sure to make a reservation many days in advance. Even though the restaurant is huge, it is completely packed on weekends.

The rosti was the softer variety, not the type with crispy edges, which is fine for this case, since it was topped with good stuff. Smoked salmon tasted more fresh than smokey. The pairing of the salsa, salmon, ikura, ricotta AND potatoes was simply divine.

Each and everyone of the flavours complemented each other perfectly, and created this multi-layered depth of umami explosion in the mouth. Portions are also very generous, with enough salmon pieces to completely cover the 5inch rosti. Lovely, and splendid work from chef Simon Sunwoo.

I was also offered a serving of hashbrowns to try from Chef Simon, because I told him I was craving for hashbrowns.

6 chunks of thick hearty hashbrowns with the edges completely fried to a crisp. Interestingly, the blackened bits were not bitter as I would normally expect charred potatoes to be. Paired with sour cream and a sprinkling of chives, I could eat this all day long, but alas, die of a heart attack.
